FRESH PASTA SALAD

Summer in a bowl!

What you'll need:
  • 1/2 pint of Fresh Cashew Crema
  • 8 oz dry cavatappi noodles (or noodles of your choice)
  • 1/4 medium red onion, finely chopped
  • 1/2 cup yellow bell pepper, chopped
  • 1/2 cup cucumber, seeds removed and chopped
  • 1/2 cup cherry tomatoes, chopped
  • 2 celery stalks, finely chopped
  • 2 carrots, finely chopped
  • 1/2 cup natural olives, chopped
  • 1/2 cup frozen peas, thawed not cooked
  • 1/2 cup spinach, chopped
  • 2 Tbs fresh parsley, chopped
  • 3 Tbs mustard
  • 3 Tbs apple cider vinegar
  • 2 Tbs agave
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt, plus more to taste
  • 1/2 tsp pepper, plus more to taste
Cook noodles according to directions strain. Immediately put in a bowl and add apple cider vinegar, mustard, Fresh Crema and seasonings. This infuses the flavors into the noodles and keeps them from sticking. It works better than cold water baths and keeps your salad from being watery. Add all of the chopped veggies and herbs. Refrigerate until chilled and ready to eat. 
Serves 4-6
